- 1 cup + 1 tbsp Butter
- 1 1/4 cups Sugar
- 1 1/4 cups Brown Sugar
- 1 cup Corn Syrup
- 1 cup + 1 cup Heavy Whipping Cream
- 1 tsp Vanilla
Instructions
- Prepare a 9 x 13-inch pan lined with foil and greased with butter.
- In a large saucepan, combine butter, granulated sugar, brown sugar, corn syrup, and 1 cup of cream over medium heat. Stir until smooth.
- Bring to a gentle boil and stir in the remaining cup of cream.
- Cook without stirring until the mixture reaches 240°F on a candy thermometer.
- Remove from heat and stir in vanilla extract carefully.
- Pour caramel into the prepared pan and let set at room temperature until firm.
- Once firm, lift out of the pan, peel off foil, cut into pieces, and wrap in wax paper or colorful foils.
Notes
Store caramels in an airtight container at room temperature for up to two weeks.
Reheat hard caramels gently in the microwave for 10 seconds to soften before serving.
Experiment with flavor varieties, adding sea salt or espresso for a unique twist.
