- 3 tablespoons finely grated parmesan cheese, divided, plus more for sprinkling on the ramekins
- ½ teaspoon dried lavender
- ½ medium lemon, zested
- ⅛ teaspoon kosher salt
- ⅛ teaspoon ground black pepper
- 3 ounces soft goat cheese
- 1 ounce ricotta cheese
- 1 tablespoon fresh thyme leaves
- 1 tablespoon honey (orange blossom preferred)
- 3 large eggs (separated)
- ¼ cup low-fat milk
- 2 teaspoons all-purpose flour

Instructions
- Preheat the oven to 375˚ F. Prepare ramekins with butter and Parmesan cheese.
- Crush dried lavender and combine with lemon zest, 1 tablespoon Parmesan, salt, and pepper. Set aside.
- In a medium bowl, mix goat cheese, ricotta, 2 tablespoons Parmesan, thyme, honey, egg yolks, milk, and flour.
- Whip egg whites to firm peaks. Gently fold into cheese-yolk mixture in thirds, maintaining some lumps for good rise.
- Place ramekins in a baking dish, fill with hot water halfway, and spoon in the mixture until two-thirds full.
- Wipe the rims of the ramekins for unobstructed rising.
- Bake for 20 minutes until browned and firm. Cool for 15 minutes before serving.
- Gently run a knife around the edges and invert onto plates, or serve straight in ramekins.
