Description

Valentine’s Brunch Goat Cheese Soufflés are light and fluffy with a rich flavor from goat cheese and fresh herbs. Ideal for impressing guests at a brunch or enjoying a cozy meal at home, this dish combines simplicity with gourmet flair, making it a standout at any gathering!


Ingredients

  • 3 tablespoons finely grated parmesan cheese, divided, plus more for sprinkling on the ramekins
  • ½ teaspoon dried lavender
  • ½ medium lemon, zested
  • ⅛ teaspoon kosher salt
  • ⅛ teaspoon ground black pepper
  • 3 ounces soft goat cheese
  • 1 ounce ricotta cheese
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon honey (orange blossom preferred)
  • 3 large eggs (separated)
  • ¼ cup low-fat milk
  • 2 teaspoons all-purpose flour
  • butter (for the ramekins)

Instructions

  • Preheat the oven to 375˚ F. Prepare ramekins with butter and Parmesan cheese.
  • Crush dried lavender and combine with lemon zest, 1 tablespoon Parmesan, salt, and pepper. Set aside.
  • In a medium bowl, mix goat cheese, ricotta, 2 tablespoons Parmesan, thyme, honey, egg yolks, milk, and flour.
  • Whip egg whites to firm peaks. Gently fold into cheese-yolk mixture in thirds, maintaining some lumps for good rise.
  • Place ramekins in a baking dish, fill with hot water halfway, and spoon in the mixture until two-thirds full.
  • Wipe the rims of the ramekins for unobstructed rising.
  • Bake for 20 minutes until browned and firm. Cool for 15 minutes before serving.
  • Gently run a knife around the edges and invert onto plates, or serve straight in ramekins.

Notes

Use room temperature ingredients for better mixing.
Whipping egg whites correctly is crucial for a fluffy soufflé.
Serve immediately for the best texture and warm flavor.
