- 1 cup mascarpone
- 1/2 cup molasses
- 1 egg yolk
- 2 teaspoons ginger
Instructions
- Bloom gelatin in cold water.
- Combine warm espresso and brown sugar in a saucepan, stirring until dissolved. Add white chocolate, cinnamon, cloves, and nutmeg. Stir until smooth, then let cool slightly.
- In a bowl, beat mascarpone and heavy cream until soft peaks form. Fold in the cooled mousse base until smooth.
- In another bowl, whisk flour, ginger, and salt. Stir in molasses and egg yolk until a soft dough forms. Roll out and cut circles for the cookie base.
- Grease silicone dome molds and fill with mousse, pressing cookie rounds in until just submerged. Cover and freeze overnight.
- Heat glazing ingredients until warm. Remove mousse domes from molds and place on a wire rack over a baking sheet. Pour glaze over the domes.
- Transfer glazed domes to a serving plate and decorate with cocoa powder or mini gingerbread cookies.
