Ingredients

  • 2 chicken breasts, sliced
  • 1 pound asparagus
  • 3/4 cup shredded carrots
  • 3/4 cup grape tomatoes, sliced
  • 1 20-ounce package cheese tortellini
  • Fresh minced basil (optional)
  • 1 tablespoon olive oil
  • 1/4 cup Italian dressing
  • 1/4 cup balsamic vinegar
  • 1 1/2 tablespoons honey
  • 1/8 teaspoon crushed red chili pepper flakes
  • 1 teaspoon salt

Instructions

  • Cook the cheese tortellini according to package instructions and keep warm in a large bowl.
  • Mix the Italian dressing, balsamic vinegar, honey, and red pepper flakes in a small bowl.
  • Heat olive oil in a pan, season chicken with salt, and cook until golden brown.
  • Pour some dressing over the cooked chicken and let it glaze briefly.
  • Sauté the asparagus until bright green, then add the carrots and cook until tender.
  • Combine the tortellini, chicken, sautéed vegetables, and remaining dressing in a large bowl; toss gently.
