Description

This White Chocolate Raspberry Mousse is incredibly satisfying with its creamy texture and vibrant raspberry flavor. Crafted with simple ingredients like white chocolate, cream cheese, and Greek yogurt, it’s perfect for a delightful dessert to impress guests or to enjoy as a special treat at home.

Ingredients

Scale
  • 1/4 cup (60 ml) whipping cream or heavy cream
  • 4 ounces (112 grams) full-fat cream cheese
  • 1/3 cup (56 grams) white chocolate chopped and melted
  • 1/2 cup (120 grams) plain greek yogurt
  • 1/2 cup (60 grams) fresh or frozen raspberries mashed with a fork
  • fresh raspberries for garnish, optional

Instructions

  • Beat the whipping cream in a small bowl with an electric mixer until stiff peaks form, being cautious not to over mix it.
  • In another medium bowl, mix the cream cheese and melted white chocolate using the same beaters. Incorporate the Greek yogurt thoroughly, then add the mashed raspberries and stir until combined.
  • Gently fold in most of the whipped cream, reserving a tablespoon for topping. Keep the mousse light as you fold the ingredients.
  • Transfer the mousse into two serving glasses and you can serve it immediately or chill for up to eight hours for a firmer texture. It has a thick, creamy consistency right after preparation, resembling a no-bake cheesecake filling, but softens to a mousse-like texture after chilling.
  • Top with the reserved whipped cream and garnish with additional fresh raspberries if desired.

Notes

Allowing the mousse to chill enhances its flavors and texture.
For a sweeter mousse, feel free to add sugar to taste when mixing the cream cheese and white chocolate.
This mousse can be prepared a day ahead for convenience.
